Local governments require food service businesses to have grease traps. The authorities have realised the damage that fats, oils, and greases can cause to a sewer system. In many areas where this issue is more prevalent, the local authorities may also require that inspections of the grease traps be conducted regularly. There are two main factors to consider when purchasing grease traps. The first one is the size of grease trap that is needed. Grease traps are sized by gallons per minute. So the first thing that must be considered is how much water will be flowing through the grease interceptor at one time. The best way to calculate this is the measure the length, width, and height of the sink in inches. Take those three numbers and multiply them. Then take the total of those three numbers multiplied and multiply that number by .003. This total is the gallons per minute total, and a grease trap that can accommodate this amount will be needed. If there are multiple sinks simply perform this equation for each sink and then add the total together.

For example, a sink measuring 40" x 12" x 12" would use the following calculation:

(40 x 12 x 12) x 0.003 = 17.28 GPM (gallons per minute)

The second factor that must be considered when buying grease traps is the maintenance. Many food service businesses neglect this task when it comes to grease traps. They must be properly maintained or possible consequences may include line backups, nasty odours, and too much grease, oil, and fat flowing into the sewer.
